Jalapeno Apricot and Wildflower Honey Jam
Just crazy good jam. This jam was written up in Country Living Magazine! Fresh jalapenos, fresh red peppers, dried apricots and local wildflower honey combined with tangerine pectin, lemon juice, lemon zest, and pure cane sugar gives this jam just the perfect amount of sweet and spicy. This jam is made in two stages, first we boil tangerines and lemons to extract the pectin, and then we cook the peppers in syrup and honey in small batches using french copper pots.
