Piment d'Espelette AOC
Espelette is a name-controlled chili pepper grown in the Basque region of France. At 4,000 on the Scoville Heat Scale, Espelette isn't terribly spicy, and in Basque cuisine it is used as a replacement for black pepper. Use this ground Piment d'Espelette when making piperade, or replace ground black pepper in any recipe for a slightly smoky flavor.
